Ingredients

 
1/4 cup minced onion
 
2 tablespoons minced leek (white and some green)
 
2 tablespoons butter
 
3 cups chicken stock
 
2 cups fresh pumpkin puree
 
1/2 teaspoon sugar
 
1/4 to 1/2 teaspoon ground mace
 
Chicken stock base, white pepper and salt to taste
 
Half-and-half cream
 
Whipped cream

Directions

Saute onion and leek in butter until soft.
Add chicken stock and pumpkin; mix well and heat.
Puree and force through sieve.
Add seasonings, chill thoroughly and adjust seasonings.
Thin with cream, if desired, and serve with dollops of whipped cream.
