Ingredients

 
3 cups (720 ml) water
 
2/3 cup (160 ml) polenta, yellow cornmeal
 
1/2 cup (120 ml) whole milk
 
2 tbs (30 ml) Fresh Thyme
 
2 tbs (30 ml) grated Parmesan cheese salt, to taste pepper, to taste
 
2 medium zucchini
 
2 medium tomatoes
 
1 small eggplant
 
1 medium green pepper olive oil, for grilling

Directions

In a medium saucepan bring water to a boil and add the polenta.
Reduce heat and simmer for 10 minutes.
Add the milk and fresh thyme and cook for an additional 5 minutes.
Add the cheese and season with salt and pepper if you wish.
Cut vegetables crosswise in halves, season with pepper, brush lightly with olive oil and grill.
