Directions
1. Reserve kohlrabi leaves for lining serving bowl later. Peel and thinly slice kohlrabi. From lemon, grate 1 teaspoon peel and squeeze 2 teaspoons juice.
2. In medium-sized bowl, combine sliced kohlrabi, lemon peel, lemon juice, grated carrot, and remaining ingredients except fresh dill sprigs; with rubber spatula, gently toss to mix well. Cover bowl and refrigerate at least 1 hour to blend flavors, stirring mixture occasionally.
