Creamy Eggplant Recipe

Ingredients
1 large eggplant
3 tbsp (50 mL) butter
1 cup (250 mL) sour cream
4 to 6 green onions, chopped fine
Salt and pepper to taste
Grated rind of 1/2 a lemon
Directions
€¢ Peel, dice and salt eggplant as for Eggplant Nature.
€¢ When ready, rinse under cold water, dry with paper towelling.
€¢ Melt the butter in a 6-cup (1.5 L) microwave-safe dish 1 minute at HIGH. Add the diced eggplant to the melted butter, stir until well mixed.
€¢ Cover and microwave at HIGH 5 minutes.
€¢ Stir and add the sour cream, green onions, salt and pepper to taste and the grated lemon rind.
€¢ Stir until well mixed.
€¢ Microwave at MEDIUM-HIGH 3 minutes.
