Creamy Chicken Gravy Recipe

Ingredients
1 tablespoon drippings from roast chicken or unsalted butter
1/4 cup finely chopped onion
1/4 cup finely chopped celery
2 tablespoons all-purpose flour
2 cups Chicken Stock or low-sodium chicken broth
1 bay leaf
1/4 cup skim milk
1/4 teaspoon salt
1/8 teaspoon black pepper
Directions
1 In a medium-size saucepan, heat the drippings over I moderate heat.
Add the onion and celery and saute, stirring occasionally, for 5 minutes or until soft.
Lower the heat, stir in the flour, and cook, stirring, 3 minutes more or until golden and bubbling.
Stir in the stock and bay leaf, bringto a boil, then Lower the heat and simmer, stirring occasionally, for 10 minutes.
Add the milk, salt, and pepper and simmer for about 2 minutesoruntil heated through.
Remove and discard the bay leaf.
If not serving right away, lay a piece of wax paper or plastic food wrap on the surface of the sauce to keep a skin from forming.
Remove the paper before reheating
