Ingredients

 2 celery heads, trimmed
 50 g/2 oz butter
 Onion1 , thinly sliced
 Bay leaves2
 100 g/4 oz breadcrumbs
 50 g/2 oz walnuts, roughly chopped
 75 ml/2 1/2 fl oz white wine
 250 ml/9 fl oz vegetable or chicken stock
 100 ml/3 1/2 fl oz double cream
 25 g/1 oz grated Parmesan

Directions

GETTING READY
1.Take thick celery stalks and chop them into two.
2.Cut the stalks in thumb size lengths.
3.Wash the stalks.
4.Preheat the grill

MAKING
3.In a large frypan, heat the butter.
4.Add celery, onions and bay leaves to it.
5.Season the ingredients.
6.Cover the pan with a lid and cook for 30 minutes.
7.Keep stirring in between.
8.Take a sauce pan.
9.Heat the remaining butter in the pan.
10.Put bread crumbs to it and saute.
11.Add walnuts and stir till golden brown.
12.Once done, keep it aside.
13.In the celery pan, add wine and stock.
14.Cook until the liquid gets reduced to one third.
15.Pour the celery mix in an oven bowl.
16.Add the breadcrumbs to the bowl and spread them well.
17.Top it with Parmesan cheese.
18.Grill for 2-3 mins.
19.Allow it to settle for fe minutes.

SERVING
20.Serve hot.
