1 medium eggplant
 
1 tablespoon whipping cream
 
Salt and pepper

Directions

Cut stem from eggplant.
Using a potato peeler, make a hollow in top of eggplant 1-inch in diameter and 2 to 3-inches deep.
Stand eggplant upright in 1 quart cas serole.
Measure cream into cavity.
Sprinkle with salt and pepper.
Cover with plastic wrap.
MICROWAVE 2 to 3 MINUTES on HIGH, or until cream begins to bubble.
Reduce setting.
MICROWAVE 4 to 6 MINUTES on '6', or until eggplant is tender.
