 Eggs - 4 , hard-boiled and finely chopped
 Cider vinegar or red wine vinegar - 2 tablespoons
 Garlic1 Clove (5gm), finely chopped
 Lemon balm2 Teaspoon, finely chopped

 Lettuce leaves8
 Twists of lemon - 4
 Parsley sprigs4

Directions

GETTING READY
1 Using a sharp knife, cut the avocados in half.
2 Remove the stones and discard.
3 Gently scoop out the avocado flesh and leave the skins intact.
4 In a mixing bowl, put all the scooped out flesh.
5 Reserve the shells.
6 Using a fork, mash the avocado flesh along with the eggs, vinegar, garlic, lemon balm, salt and pepper until a smooth paste is formed.
7 Put the prepared mixture back into the skins and mark roughly with a fork.
8 On four individual serving dishes, arrange the lettuce leaves.
9 On each prepared serving dish, place a stuffed avocado half

SERVING
10 Garnish each portion with a twist of lemon and a sprig of parsley.
11 Serve at once.
