Creamed Spinach And Madeira Recipe
Ingredients
| Spinach | 4 Pound | |
| Water | 1⁄4 Cup (4 tbs) | |
| Salt | 1 Pinch | |
| Butter | 3 Tablespoon | |
| Nutmeg | 1 Dash | |
| Salt and pepper | 1 | |
| Heavy cream | 1⁄2 Cup (8 tbs) | |
| Mushrooms | 1⁄2 Pound, sliced | |
| Butter | 2 Tablespoon | |
| Madeira | 1⁄4 Cup (4 tbs) |
Directions
Cook spinach in water for about 10 minutes, or until soft.
Drain thoroughly; put through finest blade of meat grinder.
Drain again and add 3 tablespoons butter, dash of nutmeg, salt, pepper and heavy cream.
Saute mushrooms in butter for 4 to 5 minutes, add to spinach and stir in Madeira.
Reheat briefly and serve.
This always receives compliments.
