Creamed Spinach A La Franchise Recipe
Ingredients
1 10-oz (284 g) bag of fresh spinach
1 tbsp (15 mL) flour
2 tbsp (30 mL) butter
2 tbsp (30 mL) milk or light cream
Salt and pepper to taste
1/4 tsp (1 mL) nutmeg
A pinch of garlic powder (optional)
Directions
Clean and microwave the spinach as for Spinach Nature.
Do not drain.
Chop the spinach with 2 knives and add remaining ingredients, stir well to mix thoroughly.
Microwave 4 minutes at HIGH, stirring twice during the cooking period.
The mixture should be a beautiful deep green and very creamy.
To taste, just before serving, add 1 teaspoon (5 mL) of grated lemon rind or 1/2 teaspoon (2 mL) fresh lemon juice.
