Ingredients

 
1 to 2 tablespoons butter or margarine
 
1 to 2 cups sliced mushrooms (1/4 to 1/2 pound) washed well and thoroughly dried
 
2 cups medium white sauce
 
1/4 cup light cream, if desired
 
2 cups cooked chicken, cubed into bite-size pieces Salt and pepper

Directions

Melt butter in medium frying pan. Slice mushrooms from cap through stem into melted butter. Cook and stir for 5 minutes, or until mushrooms give up their juice. To white sauce in a medium saucepan, add cream, chicken, and mushrooms. Taste and adjust seasonings; add a little salt and pepper, if desired. Serve hot in patty shells or over hot biscuits or squares of hot combread. This recipe may easily be doubled. Use one whole chicken, 3 to 3 1/2 pounds. For more chicken flavor, use part (up to one half) chicken stock for milk in the white sauce recipe.
