Creamed'Crab In Crepes Recipe

Ingredients

 
2 tablespoons butter
 
3 tablespoons minced green onions
 
1 1/2 cups crab meat, shredded
 
1/2 teaspoon salt
 
1/8 teaspoon pepper
 
1/4 cup dry white wine
 
2 tablespoons cornstarch
 
2 tablespoons milk
 
1 1/2 cups heavy cream
 
1/2 cup grated Swiss cheese
 
12 crepes
 
1/4 cup grated Swiss cheese
 
2 tablespoons butter

Directions

Heat butter and stir in onions and crab meat.
Stir over high heat for 1 minute.
Season and add white wine.
Boil mixture until wine has almost evaporated.
Remove mixture and reserve.
Blend cornstarch with milk and add to skillet with cream.
Simmer for 2 minutes and blend in cheese.
Stir continuously until cheese is melted.
Blend half the sauce with crab mixture.
Divide mixture between crepes and roll up.
Place in a buttered baking dish and spoon rest of sauce over tops of crepes.
Sprinkle with cheese and dot with butter.
Bake at 425°F for 6 to 8 minutes or until cheese is lightly browned.
