Ingredients

 Spinach1 pound
 Bacon - 4 slices, 1/8-inch slices
 All-Purpose Flour - 1 tablespoon
 Brown sugar1 Tablespoon
 Dry mustard1/4 Teaspoon
 Salt1/4 Teaspoon
 Pepper - a dash
 Half and Half1/2 Cup (16 tbs)
 Cider vinegar1 Tablespoon

Directions

MAKING
1) Rinse and drain the spinach. Put aside.
2) Into a 1 1/2-quart casserole, add in the bacon. Cover and microwave on HIGH for about 4 minutes or till the bacon becomes crisp.
3) Reserve 1 tablespoon of the bacon fat while discarding the rest.
4) Mix in the flour, sugar, salt and pepper. Pour in half and half and stir well to mix.
5) Microwave on HIGH for about 1 1/2 minutes till the mixture thickens. Mix once.
6) Lastly, add in the cider vinegar and spinach.
7) MMicrowave on HIGH for about 2 minutes till the mixture has heated through completely.

SERVING
8) Serve the Sweet Sour Spinach garnished with chopped, crisp bacon.
