Creamed Spinach Nelson Recipe

Ingredients

 
2 packages frozen chopped spinach
 
1 cup water
 
1 teaspoon salt
 
1/3 cup mayonnaise
 
Luice of 1/2 lemon
 
2 hard-boiled eggs

Directions

Cook the spinach in boiling, salted water until completely-thawed and tender.
Remove from fire.
Drain well in colander.
Return spinch to saucepan, but do not put back on fire.
Add mayonnaise and lemon juice to the drained spinach and stir until well-blended.
Grate eggs into the creamed spinach.
Can be kept warm at simmering temperature on stove or on a hot tray.
