Ingredients
| 2 pkgs. (10 oz. each) frozen chopped spinach | ||
| Butter/Margarine | 3 Tablespoon | |
| All purpose flour | 3 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Milk | 1 1/4 Cup (16 tbs) | |
| 2 hard-cooked eggs, chopped | ||
| 2 slices whole wheat bread, toasted and cut into 1/2-inch cubes | ||
| Parmesan cheese | 1 Tablespoon, grated | |
Directions
Unwrap spinach and place on plate.
Microwave at High for 5 to 7 minutes, or until defrosted.
Let stand for 5 minutes.
Drain thoroughly, pressing to remove excess moisture.
Set aside.
Place butter in 4-cup measure.
Microwave at High for 1 to 1 1/4 minutes, or until butter melts.
Stir in flour, salt and pepper.
Blend in milk.
Microwave at High for 4 to 5 minutes, or until mixture thickens and bubbles, stirring 2 or 3 times.
Stir in eggs.
In 1 1/2-quart casserole, layer half of spinach and half of white sauce.
Repeat once.
Top with toast cubes.
Sprinkle with Parmesan cheese.
Microwave at 70% (Medium High) for 6 to 10 minutes, or until heated through, rotating once.
Microwave at High for 5 to 7 minutes, or until defrosted.
