Creamed Salmon with Mushrooms Recipe
Ingredients
| Butter | 1 Tablespoon | |
| Onion | 1 Tablespoon, minced | |
| Shallot | 1 1/2 Teaspoon, finely chopped | |
| Mushrooms | 1/4 pound, thinly sliced | |
| Flour | 1 Tablespoon | |
| Dry white wine | 1/4 Cup (16 tbs) | |
| 1/4 cup liquid from canned salmon or 1/4 cup bottled clam juice | ||
| Whipping cream | 1/4 Cup (16 tbs) | |
| Parsley | 1 Tablespoon, chopped | |
| Ground pepper | 1 To taste | |
| 1 1 pound can salmon, drained and broken into bite-size pieces | ||
| Toast triangles or baked patty shells | ||
| Salt | To Taste | |
Directions
Heat butter in deep skillet.
Add onion and shallot, stirring until onion wilts.
Mix in mushrooms.
Sprinkle evenly with flour
Add wine and salmon liquid, stirring rapidly with wire whisk until thickened and smooth.
Simmer 5 minutes.
Add cream, parsley and salt and pepper to taste.
Fold in salmon and heat through.
