Ingredients

 Butter1 Tablespoon
 Onion1 Tablespoon, minced
 Shallot1 1/2 Teaspoon, finely chopped
 Mushrooms1/4 pound, thinly sliced
 Flour1 Tablespoon
 Dry white wine1/4 Cup (16 tbs)
 1/4 cup liquid from canned salmon or 1/4 cup bottled clam juice
 Whipping cream1/4 Cup (16 tbs)
 Parsley1 Tablespoon, chopped
 Ground pepper1 To taste
 1 1 pound can salmon, drained and broken into bite-size pieces
 Toast triangles or baked patty shells
 Salt To Taste

Directions

Heat butter in deep skillet.
Add onion and shallot, stirring until onion wilts.
Mix in mushrooms.
Sprinkle evenly with flour
Add wine and salmon liquid, stirring rapidly with wire whisk until thickened and smooth.
Simmer 5 minutes.
Add cream, parsley and salt and pepper to taste.
Fold in salmon and heat through.
