Creamed Salmon Loaf Recipe
Ingredients
1 large tablespoon butter (when melted)
1 rounding tablespoon flour
1/2 teaspoon salt
1/8 teaspoon red pepper
1/2 cup milk
2 cups minced salmon, free from bones and skin
1 tablespoon lemon juice
2 egg yolks beaten until very light
2 egg whites beaten to froth
Directions
Add the flour to the melted butter, mix in salt, pepper and milk, and cook until smooth.
Add minced salmon and lemon juice.
Remove from fire and add egg yolks, then fold in whites carefully.
Butter baking dish and place in pan of hot water.
Bake from 10 to 20 minutes.
Buttered cracker crumbs sprinkled on top improve this loaf.
