Creamed Rabbit Recipe
Ingredients
| Rabbit | 1 , boiled | |
| Flour | 4 Tablespoon | |
| Onion | 1 Medium, chopped | |
| 3/4 pt. rabbit stock | ||
| Bacon rashers | 2 , chopped | |
| Celery stalks | 3 , chopped | |
| Lemon juice | 1 Tablespoon | |
| 1 oz. margarine or dripping | ||
| Parsley | 2 Tablespoon, chopped | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Fry the vegetables and bacon in the fat for a few minutes, without browning.
Add the flour and mix well.
Add the stock and stir until it boils.
Boil for at least 10 minutes.
Cut the meat off the bone and dice it.
Season the sauce well, add the meat, and heat for 10 minutes, without boiling.
Add the parsley and serve.
