Creamed Potatoes Au Gratin Recipe

2 lbs. small potatoes, scrubbed
 
1 1/4 cup skim milk
 
2 tsp cornstarch
 
1/2 tsp lemonjuice
 
Salt and pepper to taste
 
2 tsp Parmesan cheese, grated

Directions

Place potatoes in a saucepan and cover with water.
Heat to the boiling point; cover and reduce heat.
Simmer until potatoes are barely fork-tender.
Drain and rinse potatoes under cold water.
Meanwhile, pour the milk into a heavy saucepan.
Cook until milk is reduced by a third; cool.
Blend in the cornstarch; return to heat and cook until slightly thickened.
Peel and slice the potatoes.
Add potatoes, lemonjuice, salt, and pepper to milk.
Fold until potatoes are coated.
Spoon potatoes and creamed mixture into a greased baking dish.
Sprinkle with the cheese.
Place under broiler, 2 in. (5 cm) from heat until top is golden brown.
