Creamed Curried Eggs Recipe
Ingredients

| 1 medium-size yellow onion, peeled and chopped | ||

| Curry powder | 1 1/2 Teaspoon | |
| Salt | 3/4 Teaspoon | |
| Milk | 1 1/2 Cup (16 tbs) | |
| 8 hard-cooked eggs | ||
Directions
1. Melt the butter in a 1-quart saucepan over moderate heat. Add the onion, and cook, uncovered, for 5 minutes, or until soft.
2. Remove the pan from the heat and stir in the flour, curry powder, and salt, and then the milk. Cook, stirring constantly, for 1 minute, or until the sauce thickens. Peel the eggs, quarter them lengthwise, and add them to the sauce. Serve on buttered toast or English muffins.
