Creamed Cauliflower Recipe

1 1/2 pounds fresh cauliflower
1/2 cup (1 stick) butter or margarine
1/2 cup all-purpose flour
1/2 teaspoon salt
1 3/4 cups milk

Directions
1. Clean cauliflower and cut into flowerets.Omit salt. Let stand covered while preparing sauce.
2. Melt butter in a 1-quart glass measuring pitcher in microwave oven (about 1 minute and 15 seconds at High). Add flour and salt and blend well. Gradually add milk, stirring constantly. Cook uncovered 4 minutes at High, or until sauce bubbles and thickens; stir after 2 minutes, then every 30 seconds.
3. Drain cauliflower and add sauce; mix. Sprinkle lightly with paprika.
