Creamed Cabbage Recipe

Ingredients

 
1 white cabbage, approximately 2 pounds
 
1 tablespoon flour
 
Salt and pepper
 
Boiling water
 
1/2 grated nutmeg
 
1 1/2 tablespoons butter
 
1 cup evaporated milk

Directions

Quarter the cabbage and cut away the tough stalk.
Plunge the quartered cabbage into a pan of fast boiling salted water.
Cook for 5 minutes (with the lid off).
Drain well and refresh under the cold faucet.
Cut the quarters, across the grain, in half inch strips.
Melt the butter in a saucepan and add the shredded cabbage.
Stir it around in the melted butter.
Sprinkle in the flour, salt and pepper, and the nutmeg, and stir well with a wooden spoon, so that the flour is well mixed.
Add the evaporated milk and bring to a boil.
Put the lid on the saucepan and cook very gently for 30 minutes.
You may stir from time to time, in case it might burn.
This is very good.
