Creamed Asparagus Parmesan Recipe

2 1/2 pounds fresh asparagus
 
1/4 cup (4 tablespoons) butter
 
2 to 3 tablespoons chopped green onions
 
1/4 teaspoon curry powder
 
1/2 teaspoon salt
 
1/2 cup flour
 
2 cups milk (or use 1 2/3 cups milk with 1/3 cup dry white table wine)
 
1/3 cup grated Parmesan cheese

Directions

Wash, trim, and cut the asparagus into diagonal slices (about 2/3 inch long).
Cook in boiling, salted water until tender-crisp.
Meanwhile melt butter; add onions, curry, and salt; and cook for a few minutes.
Stir in flour.
Slowly add the milk, and cook and stir until mixture boils and thickens.
Add the drained cooked asparagus.
Turn into a shallow baking dish or into individual baking dishes.
Sprinkle with the cheese and bake in a hot oven (400°) for 15 to 20 minutes.
