1 tablespoon unsalted butter or margarine
 
1 small yellow onion, finely chopped
 
1 medium-size sweet red pepper, cored, seeded, and finely chopped
 
1 1/2 tablespoons all-purpose flour
 
1/2 cup Chicken Stock or low-sodium chicken broth
 
1/2 cup skim milk
 
1/8 teaspoon ground nutmeg
 
1 package (9 ounces) frozen artichoke hearts, thawed and chopped
 
1 cup fresh or frozen corn kernels
 
1/4 teaspoon each salt and black pepper, or to taste

Directions

1 ln a medium-size heavy saucepan, melt the butter over moderate heat.
Stir in the onion and red pepper and saute, stirringoccasionally, for 5 minutes or until soft.
2 Lower the heat, stir in the flour, and cook, stirring, for 1 minute.
Add the stock, milk, and nutmegand cook, stirring constantly, for 5 minutes or until thickened and smooth.
Add the artichoke hearts, corn, salt, and black pepper and cook, stirring constantly, 2 minutes more or until hot.
