1 small yellow onion, finely chopped
1 medium-size sweet red pepper, cored, seeded, and finely chopped
1 1/2 tablespoons all-purpose flour
1/2 cup Chicken Stock or low-sodium chicken broth
1/2 cup skim milk
1/8 teaspoon ground nutmeg
1 package (9 ounces) frozen artichoke hearts, thawed and chopped
1 cup fresh or frozen corn kernels
1/4 teaspoon each salt and black pepper, or to taste
Directions
