Directions

Cream Puffs:
Heat water and butter to rolling boil.
Stir in flour all at once.
Stir vigorously over low heat until mixture leaves the pan and forms into a ball, about 1 minute.
Remove from heat.
Beat in eggs thoroughly one at a time.
Beat until mixture is smooth and velvety.
Drop from spoon onto ungreased baking sheet.
Bake until dry in 400 degree oven approximately 45 to 50 minutes.
Cool slowly.
Cut top from puff and dip in powdered sugar.
Fill with cream filling.
Filling: Combine sugar, salt, cornstarch.
Add 1 1/2 cups of milk.
Cook until thickened.
Beat egg yolks; add to the other half cup of milk.
Add egg mixture to custard and cook 2 minutes more.
Add butter & vanilla.
Cool.
Fill puffs.
