Cream Of Potato Soup Recipe
This cream of potato soup recipe is a delicious and savory recipe for a potato soup prepared with onions and vegetables like celery. Cooked in milk, the cream of potato soup is seasoned with vinegar and black pepper and served hot.

Melt 1 tablespoon shortening, add 1 medium onion finely diced and cook till tender.
Add 1 tablespoon flour and brown slightly.
Meanwhile peel and dice 4 medium potatoes and add to above with 1 stalk celery diced, 1 tablespoon salt.
Add 6 cups water and boil gently till potatoes are tender.
Make a smooth thin paste of 1 tablespoon flour, 1/2 cup cream or evaporated milk.
Stir into potatoes.
Season with a little vinegar and sprinkling of black pepper.
If too thick add more water.
