Cream Of Mushroom Soup Recipe
It was when I thought of becoming a vegetarian I tried making this Cream Of Mushroom Soup and to my surprise, this is still the best vegetarian soup I have ever had! Use chicken or veal broth, both way this Cream Of Mushroom Soup tastes simply great with those prettty mushroom bites!
Ingredients
4 tbsp. butter
1/2 - lb. mushrooms
1 qt. chicken or veal broth
2 tbsp. flour
1 cup cream
1 tsp. salt
1/8 tsp. pepper
Directions
Melt 2 tbsp butter in skillet and saute the mushrooms which have been I washed, peeled and chopped cover and simmer 5 minutes.
Add to broth and cook 5 minutes.
Melt remaining butter in top of double boiler, add flour, and heat until it bubbles, then gradually add 2/3 cup broth.
Add remaining soup, cream, and seasoning.
Garnish with whipped cream if desired.
