Ingredients

 
Mushrooms - 1/2 pound
 
Whole wheat flour - 1 tablespoon or Potato flour - 1/2 tablespoon
 
Top milk - 1 cup
 
White stock - 1 pint
 
Hot milk - 1 pint
 
Butter - 2 ounce
 
Large onion - 1
 
Parsley – for garnishing, chopped
 
Salt – as per taste
 
Paprika – for seasoning
 
Fresh herbs - 1 teaspoon

Directions

GETTING READY
1. Wash mushrooms but do not peel. Chop it finely.
2. Dice onions.

MAKING
3. In a pan, melt butter.
4. Add onion. Cook till it becomes tender but do not brown.
5. Add mushrooms and herbs. Continue to cook while stirring frequently.
6. Add flour, stir well.
7. Add stock and hot milk. Let it simmer for 30 minutes.
8. Strain.
9. Return to pan. Add salt and seasoning. Reheat.
10. Remove from flame and add top milk.

SERVING
11. To serve Cream of Mushroom Soup, pour in hot tureen and top with chopped parsley.
