Rich Cream Of Mushroom Soup Recipe
Ingredients
25 mL 2 tbsp margarine
1 small onion, thinly sliced
125 mL 1/2 cup leek, thinly sliced
125 mL 1/2 cup celery, thinly sliced
375 mL 11/2 cups mushrooms, thinly sliced
750 mL 3 cups chicken broth, skimmed
125 mL 1/2 cup potatoes, thinly sliced
125 mL 1/2 cup 15% cream
Salt and pepper, to taste
Directions
Melt the margarine in a saucepan over high heat and cook the onion, leek, celery and mushrooms slowly.
Add the beef broth and stir, then add the potatoes and let simmer for 15 minutes on medium heat.
Puree in an electric mixer or with a hand mixer.
Add the cream and season to taste.
