1 pound fresh mushrooms, sliced
 
1 medium onion, finely chopped
 
1/4 cup plus 2 tablespoons butter or margarine
 
1/4 cup all-purpose flour
 
3 cups chicken broth
 
2 cups half-and-half
 
1 teaspoon salt
 
1/4 teaspoon white pepper
 
1/2 cup dry sherry
 
1/4 teaspoon Angostura bitters

Directions

Saute mushrooms and onion in butter in a heavy saucepan over low heat for 10 minutes or until vegetables are tender.
Add flour, stirring until smooth.
Cook 1 minute, stirring constantly.
Gradually add broth; cook over medium heat, stirring constantly, until thickened and bubbly.
Reduce heat to low; stir in remaining ingredients.
Cook just until thoroughly heated, stirring frequently.
Serve immediately.
