Ingredients

 
4 tablespoons oil
 
2 slices ginger, shredded
 
1 stalk scallion, cut into 1 inch sections
 
1/2 cup crab meat
 
1/2 teaspoon salt
 
1 tablespoon sherry
 
6 cups chicken broth
 
3 egg whites
 
3 tablespoons cream
 
3 teaspoons cornstarch

Directions

Heat a pan with the oil and when it is very hot saute the ginger and scallion for 1 minute.
Lower the heat and add the crab meat and salt; stir once or twice.
Add the sherry and continue to cook for another minute.
Discard the ginger.
Turn the heat high and add the chicken broth, reserving 1/2 cup to mix with the cornstarch, and bring to a boil.
Lower the heat and continue to cook.
Beat the egg whites till frothy but not stiff.
Blend the cream with the egg and add to the soup.
Mix remaining chicken broth and cornstarch to a smooth paste and add slowly to the soup, stirring constantly.
Continue to simmer for another 5 minutes and then serve very hot in a deep bowl.
