Ingredients

 
2 Tbs unsalted butter
 
1 Tbs olive oil
 
1 bunch celery, stems and leaves, chopped (about 5 cups)
 
1 cup vidalla onion, chopped
 
1/4 cup chopped green onion
 
2 russet potatoes, peeled and diced
 
6 cups chicken or vegetable broth
 
1/2 tsp celery salt
 
1/2 tsp celery seed
 
freshly ground black pepper

Directions

Melt butter and oil in soup pot. Add vegetables and saute for about 15 mins. Add broth, spices, bring to a boil and
lower heat to a simmer. Simmer for about 35 mins. Strain, reserving soup broth. Puree solids with a little broth in blender
in batches until smooth. Return to soup pot. Combine soup broth with puree until desired consistency is reached. Heat through.
Garnish with celery leaves, or parsley or chopped green onion.
