| Egg yolks | 2 | |
| Celery salt | 1 Teaspoon | |
| Ground allspice | 1/4 Teaspoon | |

Directions
Put the celeriac, potato and onion in a casserole and add the white wine.
Cover and microwave onhigh for 15 minutes or until the vegetables are tender.
Pour the mixture into a food processor.
Pour the milk and 3/4 cup (200 ml/7 fl oz) of water into a large dish and heat in the oven onhigh for 4-5 minutes.
Do not allow the mixture to boil over.
Stir the milk and water mixture into the vegetables in the food processor.
Add the butter, egg yolks, celery salt, allspice and pepper.
Puree until smooth.
Add salt to taste.
Cover and microwave onhigh for 15 minutes or until the vegetables are tender.

Pour the milk and 3/4 cup (200 ml/7 fl oz) of water into a large dish and heat in the oven onhigh for 4-5 minutes.
Do not allow the mixture to boil over.

Puree until smooth.
Add salt to taste.
