Cream Of Broccoli Soup Recipe

Ingredients

1 1/2 pounds broccoli
1 onion, finely chopped
1 carrot, sliced
2 stalks'celery with the leaves
2 potatoes, peeled and chopped
1 teaspoon salt
3 cups chicken broth
1 cup light cream
1/2 cup thinly sliced boiled ham, diced
1/2 cup sour cream

How to make Cream Of Broccoli Soup

Discard the lower third of the broccoli stems and chop the remaining part into small pieces.
Place in a 2-quart glass or ceramic casserole with the onion, carrot, celery, potatoes, salt, and chicken broth.
Cover and cook on the highest setting for 10 minutes, until the broccoli is tender.
Puree the soup in a blender.
Add the cream and ham and heat (highest setting) for 5 minutes, until very hot.
Serve with a spoonful of sour cream.
