Cream Of Broccoli Soup Recipe

Ingredients

 
2 packages (10 ounces each) frozen chopped broccoli
 
2 cans (10 1/2 ounces) chicken broth (or 21/2 cups)
 
1 tablespoon chopped onion
 
2 cups half-and-half Roux (mix 2 tablespoons soft butter with 2 tablespoons flour)

Directions

Cook broccoli as package directs, then add chicken broth and onion, and simmer 20 minutes longer. Remove from heat and whirl in blender until smooth. (Blend in 2 or 3 batches). Add half-and-half, then roux. Simmer until mixture thickens slightly.
