Cream of Broccoli Soup Recipe

Ingredients
1 lb. broccoli (can use hard ends of broccoli to be frugal)
1 tbsp. butter
1/4 c. yellow onions, chopped
1/8 c. chopped green pepper
1 tbsp. flour
3 c. chicken soup stock
1/2 bay leaf
Parsley
1/2 tsp. ground thyme
3 black peppercorns
Pinch nutmeg
2 egg yolks, whipped & blended with 1/2 c. milk or cream
Directions
Stage 1-Chop up the broccoli, saving some of the small buds and flowers for later use.
Stage 2-Saute in the butter along with the onions and green pepper.
Stage 3-Sprinkle with the flour and stir.
Stage 4-Add to the soup stock, along with the bay leaf, parsley, thyme and peppercorns.
Stage 5-Cook for 20 minutes and puree mixture in blender or sieve. Add the nutmeg.
Stage 6-Strain the soup from the pulp and return to pan.
Stage 7-Add the egg yolk and milk or cream mixture and pour into hot soup.
Stage 8-Serve with some of the reserved broccoli buds floating in the bowl.

dude, you really do love broccolis...but honestly, cream of broccoli soup do taste good. i've tried those ready-to-eat in cans last winter, really enjoyed it. makes me coming back for more...an dale, an dale...BROCOLLI! WEEEEE! YAAAAAAH!
