Cream Of Broccoli Leek Soup Recipe

Ingredients
1 1/2 lbs. broccoli
3/4 lb. leeks
1 stick butter
10 c. chicken stock
2 or 3 potatoes, diced
1 c. cream
Directions
Trim and chop broccoli, separating tips and stalks.
Chop leeks (wash well, trim green tops).
In pan, saute the leeks and broccoli stalks in butter for 5 minutes, add broccoli tops and saute 5 minutes more.
Add cubed potatoes and chicken stock.
Bring to a boil and cook over moderate heat for 20 minutes.
Puree the mixture in batches in blender.
Stir in heavy cream and season with salt and pepper.
