Cream Of Almond Crepes Recipe

Ingredients
12 to 15 dessert crepes
2 tablespoons butter
2 tablespoons flour
1 cup milk
3 ounces almond extract
3 egg yolks
1 cup sugar
1/2 teaspoon salt
1/2 cup Grand Marnier liqueur or rum
Directions
Melt butter and blend in flour.
Cook for 1 minute and add cold milk.
Bring to a simmer and cook 2 to 3 minutes, stirring constantly.
Remove from heat.
Add almond extract, egg yolks, sugar and salt.
Beat.
Adjust sweetness to your taste and add the Grand Marnier liqueur.
Refrigerate until cold.
Divide the mixture between the crepes and roll up package style.
Place crepes in an ovenproof dish and dot with butter.
Sprinkle tops with sugar.
Place under broiler for 3 to 4 minutes, until sugar is browned.
