Cream Sauce For Pasta Recipe
Ingredients
2 cups water
1 medium-size all-purpose potato, peeled, halved, and thinly sliced
2 cloves garlic
1/2 teaspoon salt
3 ounces Neufchatel cream cheese
2 teaspoons snipped fresh chives
1/2 teaspoon dried oregano, crumbled
Directions
1 ln a 10-inch nonstickskillet, bring the water, potato, and garlic to a boil over moderate heat.
Lower the heat and simmer, covered, forabout 12 minutes or until the potato is tender.
Transfer the potato, garlic, and half of the cooking liquid to a food processor or blender and whirl for 1 minute or until smooth.
Add the cream cheese and whirl 30 seconds longer.
2 Return the mixture to the skillet, stir in the chives and oregano, and cook over moderate heat for 1 minute or until bubbling and of a coating consistency
