|Grated onion||To Taste|

Blend in electric blender until coarsely ground, not pureed.
Make white sauce by combining skim milk powder, potato or brown rice flour, stock and 4 cups of water, using a wire whisk.
Then cook in double boiler, over hot water, until sauce is thick.
Add spinach mixture to white sauce, then add grated onion, salt and pepper to taste.
Keep hot in double boiler until ready to serve.
