Cream Of Potato Soup Recipe

Ingredients
2 pounds potatoes, peeled and cut in small cubes
2 onions, chopped
2 leeks (white part only), chopped
1/4 cup parsley, chopped
1 carrot, chopped
1 quart light stock or chicken broth
1/4 teaspoon thyme
1 teaspoon salt
1/8 teaspoon pepper
2 cups scalded cream or half-and-half
2 tablespoons butter
Directions
Combine all ingredients except cream and butter in crock cooker.
Cook at Low for 10 to 12 hours.
During the last hour, stir in cream and butter.
Potatoes may be lightly mashed at that time.
Continue cooking only until soup is hot again.
