Cream of Lettuce and Spinach Soup Recipe
Ingredients
| Chicken stock | 2 Cup (16 tbs) | |
| Packed Leaf Lettuce - 2 cups | ||
| Spinach leaves | 1 Cup (16 tbs) | |
| Long grain rice | 2/3 Cup (16 tbs), cooked | |
| Mace - a pinch | ||
| Light Cream or Milk - 1 1/2 cups | ||
| Hot Pepper Sauce - a dash | ||
| Salt | To Taste | |
| Pepper | 1 | |
| Pimento | 1 Tablespoon, finely chopped | |
Directions
MAKING
1) Into a saucepan, combine the stock, lettuce spinach, rice and mace
2) Cover and bring to a gentle boil
3) Simmer over low heat for 15 minutes
4) Into a food processor, blend in batches for 2-3 minutes until smooth
5) Scrape down the sides of the bowl timely
6) Return the mixture to the saucepan and stir in the cream
7) Bring to a gentle simmer
8) Season with salt and hot pepper sauce
SERVING
9) Serve warm or chilled and garnish with pimento into soup bowls
