Ingredients

 Chicken stock2 Cup (16 tbs)
 Packed Leaf Lettuce - 2 cups
 Spinach leaves1 Cup (16 tbs)
 Long grain rice2/3 Cup (16 tbs), cooked
 Mace - a pinch
 Light Cream or Milk - 1 1/2 cups
 Hot Pepper Sauce - a dash
 Salt To Taste
 Pepper1
 Pimento1 Tablespoon, finely chopped

Directions

MAKING
1) Into a saucepan, combine the stock, lettuce spinach, rice and mace
2) Cover and bring to a gentle boil
3) Simmer over low heat for 15 minutes
4) Into a food processor, blend in batches for 2-3 minutes until smooth
5) Scrape down the sides of the bowl timely
6) Return the mixture to the saucepan and stir in the cream
7) Bring to a gentle simmer
8) Season with salt and hot pepper sauce

SERVING
9) Serve warm or chilled and garnish with pimento into soup bowls
