Cream Of Lettuce Recipe

Ingredients
4 cups (1 L) chicken stock
2 cups (500 ml) potatoes, cut into pieces
1 Boston lettuce, washed, cut into pieces
Salt and pepper
Pinch of cayenne pepper
1/2 cup (125 ml) plain yogurt
1 cup (250 ml) partially skimmed milk
Shredded lettuce leaves
Directions
– In a saucepan, bring chicken stock to a boil. Add potatoes and cook for 20 minutes.
– Add lettuce and simmer for 1 minute. Season with salt, pepper and cayenne pepper. Run mixture through blender.
– Meanwhile, in a bowl, mix together yogurt and milk and pour into blender and mix. Pour into soup tureen and garnish with shredded lettuce leaves.
