Ingredients
2 c dry chestnuts
2 c stock
1 stalk celery, diced
2 c hot milk
1/2 c powdered milk
3 t nutritional yeast
2 t butter
2 t wholewheat flour
1 onion, minced
Dash of paprika
Pinch of nutmeg
Directions
Soak dried chestnuts overnight.
Drain, peel, and boil in stock with celery until soft.
Press chestnuts through a sieve or whirl in blender until pureed.
Blend milk with powdered milk and nutritional yeast, then combine with chestnut puree.
Saute onions in butter, add flour, and stir until blended.
Combine onion-flour mixture with liquid mixture and simmer for 10 minutes.
Sprinkle with paprika and a dash of nutmeg.
