Cream Of Celery Root Soup Recipe

Ingredients

 
1-1/2 cups diced celery root
 
1/2 cup diced onion
 
2 tablespoons minced leeks
 
1 teaspoon minced garlic
 
3 tablespoons butter
 
1/2 teaspoon dry mustard
 
1/8 teaspoon sugar
 
2 cups chicken or veal stock
 
1 cup half-and-half cream or milk
 
Salt, white pepper, celery
 
Salt and freshly grated lemon peel
 
3/4 cup tiny celery root julienne, raw or cooked in a little stock until just tender
 
Paprika
 
Minced fresh parsley

Directions

Saute celery root, onion, leeks and garlic in butter 5 minutes.
Sprinkle with mustard and sugar and cook and stir 5 more minutes.
Add stock, cover, bring to boil, lower heat and simmer until celery root is tender.
Puree, add cream and reheat without boiling.
Season to taste with salt, pepper, celery salt and lemon peel.
