Cream Of Celery Medley Recipe
Ingredients
20 oz (568 ml) canned cream of celery soup
10 oz (284 ml) milk
10 oz (284 ml) water
1/4 cup (60 ml) broccoli,broken into flowerets
1/4 cup (60 ml) cauliflower, broken into flowerets
1/2 cup (125 ml) broccoli stems
1/2 cup (125 ml) cauliflower stems
3/4 tsp (3 ml) onion salt
1/2 tsp (2 ml) celery pepper
1/4 cup (60 ml) 35% cream
Directions
– In a saucepan, heat cream of celery soup with milk and water, and set aside.
– In another saucepan, filled with lightly salted boiling water, blanch broccoli and cauliflower, then drain. Set broccoli and cauliflower flowerets aside for garnish.
– Add broccoli and cauliflower stems to cream of celery soup. Season with onion salt and celery pepper and simmer for 10 minutes.
– Run mixture through blender and gently pour in cream. Adjust seasoning and pour into serving bowls. Decorate with broccoli and cauliflower flowerets.
