6 tbsp unsalted butter
2 cups carrots, diced
1/2 cup leeks, minced
1/4 cup onions, minced
10 cups chicken broth
1/4 cup rice flour or potato flour

Directions
In a saucepan, melt half the butter.
Cook vegetables until tender but not browned.
Add chicken broth.
Bring to a boil.
Cover.
Over low heat, simmer 1 hour.
In a bowl, pour 1 cup (250 mL) hot broth.
Blend in rice flour.
Let stand to cool.
Pour slowly into soup, stirring constantly.
In a blender, puree soup.
Return to saucepan.
Adjust seasoning.
Simmer 1-2 minutes until creamy smooth.
Dot with remaining butter.
