Ingredients

 
Broccoli
 
Frozen Spinach
 
Parmigiano red chiano cheese

Directions

Take a heavy bottom pot and heat at medium heat. Take a bit of extra virgin olive oil.

Add one diced white onion and 2 cloves of minced garlic. Add a pinch of kosher salt and black pepper.

Let it cook for sometime.

Cut the broccoli in large pieces. Cut the stalk in smaller pieces and throw them all in the pot.

Take 5 cups of broth and ¾ of previously frozen spinach. Let it come to boil. Put the lid and cook for 25 minutes.

Add some cream and cook it for some more time and then blend it with a hand blender.

Season the soup with salt and pepper.

Scoop some soup in a bowl and finish with a tablespoon full of grated Parmigiano red chiano cheese.
