Cream Layer Cookies Recipe

8 oz. flour
Little cochineal
5 oz. margarine
Whipped cream
5 oz. castor sugar
Angelica
Egg
Directions
Cream margarine and sugar until soft and light.
Add flour, knead well and work in enough egg tobind.
Colour 1/3 of the dough pink, with cochineal.
Roll out until under 1/4 inch thick cut into rounds and bake on ungreased tins for about 10 minutes in moderate oven (375°F.€”Gas Mark 4).
Cool on baking tins.
Sandwich 3 of these biscuits with whipped cream and decorate with whipped cream and angelica, putting a pink biscuit between 2 white ones.
