Cream Filled Apricots Recipe
Ingredients
| Dried apricots pieces | 10 | |
| Sugar | 1/4 Cup (16 tbs) | |
| Lemon juice | 1 Teaspoon | |
| Heavy whipping cream | 1/2 Cup (16 tbs) | |
| Almonds | 5 , finely chopped | |
| Finely slivered almonds & pistachios | ||
Directions
Soak apricots in warm water for 2 hours to soften.
Drain.
Cut each apricot with a sharp knife into 2 pieces.
In a saucepan mix sugar, lemon juice and 1 cup water.
Bring to a boil and cook until sugar mixture is syrupy for about 5 minutes Add the apricots and simmer for 5 minutes.
Remove from heat and allow to cool.
Whip cream with a beater until stiff peaks form.
Gently fold the finely chopped almonds into the cream.
In the serving dish arrange half the apricot pieces in a single layer.
Dollop cream mixture onto the apricots.
Cover with the remaining apricots, like a sandwich.
Garnish with almonds and pistachios.
